- 2 boneless, skinless chicken breasts
- 1 cup plain Greek yogurt
- 2 tablespoons freshly squeezed lemon juice
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon dried oregano
- 1 teaspoon dried rosemary or thyme
- 1 teaspoon paprika
Instructions
- In a bowl, combine Greek yogurt, lemon juice, minced garlic, olive oil, salt, pepper, and herbs. Stir well.
- Add chicken breasts to the bowl and coat thoroughly with the yogurt mixture. Cover and marinate for at least 1 hour, or up to 24 hours.
- Preheat the grill to high heat or the oven to 400°F (200°C).
- Grill the chicken for about 6-7 minutes per side, or bake for 25-30 minutes until fully cooked.
- Let the chicken rest for a few minutes before slicing.
Notes
For a vegetarian option, substitute chicken with tofu. Leftovers can be shredded for wraps or grain bowls.
