- 2 cups gingerbread cookies, crumbled
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 tsp ground ginger
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1 cup chocolate chips (dark, milk, or white)
Instructions
- Crush the cookies in a food processor to fine crumbs.
- In a bowl, combine the cookie crumbs, cream cheese, powdered sugar, ground ginger, cinnamon, nutmeg, and salt until smooth.
- Cover and refrigerate the mixture for about 30 minutes.
- Roll the mixture into 1-inch balls.
- Melt the chocolate in a microwave-safe bowl in 20-second intervals until smooth.
- Dip each truffle into the melted chocolate and place on a parchment-lined tray.
- Refrigerate until the chocolate is firm, about 30 minutes.
- Serve and enjoy!
Notes
Use room-temperature cream cheese for a smoother mixture. Feel free to experiment with different types of chocolate for coating.
