Ingredients

- 2 cups all-purpose flour
- 3/4 cup brown sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp ground allspice
- 1/4 tsp salt
- 8 oz cream cheese
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, mix softened butter with brown sugar until creamy. Add the egg and vanilla, blending until smooth. Stir in flour, ginger, cinnamon, allspice, and salt.
- In another bowl, combine cream cheese, powdered sugar, and vanilla. Mix until smooth.
- Scoop cookie dough, flatten it, place cheesecake filling in the center, and fold the dough over, forming a ball.
- Place on a lined baking sheet and bake for about 10-12 minutes until soft and slightly puffy.
- Let cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.
Notes
Chill the dough if it feels sticky to work with. Don’t overbake, as they will firm up while cooling.
