Description

Soft, chewy cookies infused with gingerbread spices and topped with a delightful cheesecake filling.


Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground allspice
  • 1/4 tsp salt
  • 8 oz cream cheese
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix softened butter with brown sugar until creamy. Add the egg and vanilla, blending until smooth. Stir in flour, ginger, cinnamon, allspice, and salt.
  3. In another bowl, combine cream cheese, powdered sugar, and vanilla. Mix until smooth.
  4. Scoop cookie dough, flatten it, place cheesecake filling in the center, and fold the dough over, forming a ball.
  5. Place on a lined baking sheet and bake for about 10-12 minutes until soft and slightly puffy.
  6. Let cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.

Notes

Chill the dough if it feels sticky to work with. Don’t overbake, as they will firm up while cooling.
