Description

A cozy one-pan dish featuring tender chicken breasts in a rich garlic butter sauce, paired with fluffy seasoned potatoes.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 lb baby potatoes, halved
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • 1 teaspoon Italian herbs
  • 2 tablespoons fresh parsley, chopped (for garnish)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss halved baby potatoes with olive oil, salt, pepper, and herbs.
  3. In a large oven-safe skillet, melt butter over medium heat and sauté minced garlic until fragrant.
  4. Add the chicken and cook for about 5 minutes on each side until lightly browned.
  5. Add the seasoned potatoes to the skillet, stir to combine, and drizzle more butter on top.
  6. Bake in the preheated oven for 20-25 minutes until chicken is cooked through and potatoes are golden.
  7. Garnish with fresh parsley and serve hot.

Notes

For best results, use a meat thermometer to ensure chicken is cooked to at least 165°F (75°C).
