- 4 boneless, skinless chicken breasts
- 1 lb baby potatoes, halved
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- Salt, to taste
- Pepper, to taste
- 1 teaspoon Italian herbs
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss halved baby potatoes with olive oil, salt, pepper, and herbs.
- In a large oven-safe skillet, melt butter over medium heat and sauté minced garlic until fragrant.
- Add the chicken and cook for about 5 minutes on each side until lightly browned.
- Add the seasoned potatoes to the skillet, stir to combine, and drizzle more butter on top.
- Bake in the preheated oven for 20-25 minutes until chicken is cooked through and potatoes are golden.
- Garnish with fresh parsley and serve hot.
Notes
For best results, use a meat thermometer to ensure chicken is cooked to at least 165°F (75°C).
