- 1 package of tortellini (fresh or frozen, cheese or meat-filled)
- 1 pound ground beef (or ground turkey/plant-based option)
- 3 cloves fresh garlic, minced
- 4 cups fresh spinach (or frozen, excess water squeezed out)
- 4 tablespoons butter (or olive oil for a healthier twist)
- 1/2 cup freshly grated Parmesan cheese (or pre-grated)
- Salt, to taste
- Pepper, to taste
- Red pepper flakes (optional)
Instructions
- Cook the tortellini according to package instructions. Drain and set aside.
- In a skillet over medium heat, add ground beef and cook until browned. Break it apart with a spatula!
- Toss in minced garlic and sauté for about 1 minute until fragrant.
- Add fresh spinach to the skillet and let it wilt for about 2 to 3 minutes.
- Stir in the butter until melted.
- Gently fold in the cooked tortellini and mix well, seasoning with salt, pepper, and red pepper flakes.
- Top with grated Parmesan cheese before serving.
