Description

Ingredients

  • 1 package of tortellini (fresh or frozen, cheese or meat-filled)
  • 1 pound ground beef (or ground turkey/plant-based option)
  • 3 cloves fresh garlic, minced
  • 4 cups fresh spinach (or frozen, excess water squeezed out)
  • 4 tablespoons butter (or olive oil for a healthier twist)
  • 1/2 cup freshly grated Parmesan cheese (or pre-grated)
  • Salt, to taste
  • Pepper, to taste
  • Red pepper flakes (optional)


Instructions

  1. Cook the tortellini according to package instructions. Drain and set aside.
  2. In a skillet over medium heat, add ground beef and cook until browned. Break it apart with a spatula!
  3. Toss in minced garlic and sauté for about 1 minute until fragrant.
  4. Add fresh spinach to the skillet and let it wilt for about 2 to 3 minutes.
  5. Stir in the butter until melted.
  6. Gently fold in the cooked tortellini and mix well, seasoning with salt, pepper, and red pepper flakes.
  7. Top with grated Parmesan cheese before serving.
