- Frozen Meatballs (beef, turkey, chicken, or plant-based)
- 4 russet Potatoes, peeled and chopped
- 2 Carrots, peeled and chopped
- 1 yellow Onion, chopped
- 4 cups Beef Broth (or vegetable broth)
- 1 tsp garlic powder
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 2 tbsp Cornstarch (optional, for thickening)
Instructions
- Peel and chop the potatoes and carrots into bite-sized pieces.
- Layer the chopped veggies at the bottom of your slow cooker and add the frozen meatballs on top.
- Pour in the beef broth and sprinkle the seasonings over everything, stirring gently to combine.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- If you prefer a thicker gravy, combine cornstarch with water to create a slurry and stir it in during the last 30 minutes of cooking.
- Serve warm and enjoy, garnished with fresh parsley if desired.
Notes
For a twist, try adding frozen peas during the last hour of cooking or experiment with different herbs. Serve with crusty bread or a salad for a complete meal.
