Description

A comforting and hearty one-pot meal featuring frozen meatballs, vegetables, and flavorful broth, perfect for busy weeknights.


Ingredients

  • Frozen Meatballs (beef, turkey, chicken, or plant-based)
  • 4 russet Potatoes, peeled and chopped
  • 2 Carrots, peeled and chopped
  • 1 yellow Onion, chopped
  • 4 cups Beef Broth (or vegetable broth)
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 tbsp Cornstarch (optional, for thickening)


Instructions

  1. Peel and chop the potatoes and carrots into bite-sized pieces.
  2. Layer the chopped veggies at the bottom of your slow cooker and add the frozen meatballs on top.
  3. Pour in the beef broth and sprinkle the seasonings over everything, stirring gently to combine.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. If you prefer a thicker gravy, combine cornstarch with water to create a slurry and stir it in during the last 30 minutes of cooking.
  6. Serve warm and enjoy, garnished with fresh parsley if desired.

Notes

For a twist, try adding frozen peas during the last hour of cooking or experiment with different herbs. Serve with crusty bread or a salad for a complete meal.
