- 2 chicken breasts
- 2 large sweet onions
- 1 can cream of chicken soup
- 2 cups beef broth
- 1 cup gruyere or mozzarella cheese

Instructions
- In a skillet, heat some butter over medium heat. Add thinly sliced onions and a sprinkle of salt. Stir occasionally until caramelized and golden brown.
- Season chicken breasts with salt and pepper, and cook in a separate pan until no longer pink. Shred or chop into bite-sized pieces.
- In a large mixing bowl, combine caramelized onions, cooked orzo pasta, chicken, cream of chicken soup, and beef broth. Mix until evenly coated.
- Transfer the mixture to a greased casserole dish, top with cheese, and bake in a preheated oven at 350°F (175°C) for about 30-35 minutes, until the cheese is bubbly and golden.
