Description

Ingredients

  • 1 cup orzo pasta
  • 2 chicken breasts
  • 2 large sweet onions
  • 1 can cream of chicken soup
  • 2 cups beef broth
  • 1 cup gruyere or mozzarella cheese
  • Salt, to taste
  • Pepper, to taste
  • 1 tsp garlic powder


Instructions

  1. In a skillet, heat some butter over medium heat. Add thinly sliced onions and a sprinkle of salt. Stir occasionally until caramelized and golden brown.
  2. Season chicken breasts with salt and pepper, and cook in a separate pan until no longer pink. Shred or chop into bite-sized pieces.
  3. In a large mixing bowl, combine caramelized onions, cooked orzo pasta, chicken, cream of chicken soup, and beef broth. Mix until evenly coated.
  4. Transfer the mixture to a greased casserole dish, top with cheese, and bake in a preheated oven at 350°F (175°C) for about 30-35 minutes, until the cheese is bubbly and golden.
