- 8 oz button or cremini mushrooms, sliced
- 1 diced onion
- 2 cloves fresh minced garlic
- 4 cups vegetable or chicken broth (low sodium if preferred)
- 1 tsp fresh or dried thyme
- 1 tsp paprika
- Salt to taste
- Pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Add the diced onion and cook until translucent, about 3-5 minutes. Stir in minced garlic and cook until fragrant, about 1 minute.
- Add the mushrooms and cook until soft and browned, about 5-7 minutes.
- Sprinkle in the thyme, paprika, salt, and pepper. Let bloom for about 1 minute.
- Incorporate the rice and stir to coat it in the mixture.
- Pour in the broth, bring to a boil, then reduce heat to low. Cover and simmer for about 20 minutes or until rice is tender.
- Let sit for a few minutes off the heat, then fluff with a fork and serve.
Notes
For extra flavor, consider adding freshly chopped herbs and adjust seasoning to taste. This dish can also be enhanced with proteins like chicken or tofu.
