Description

A cozy, heartwarming vegetable soup perfect for chilly days, made with fresh veggies and aromatic herbs.


Ingredients

Scale
  • 2 Carrots, chopped
  • 2 Celery stalks, chopped
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 Zucchini, chopped
  • 1 can Diced Tomatoes
  • 4 cups Vegetable Broth
  • 1 cup Green Beans, chopped
  • Herbs (like thyme and basil) to taste
  • Salt and pepper to taste
  • Olive oil for sautéing


Instructions

  1. Prepare Your Veggies: Wash and chop your carrots, celery, onion, garlic, zucchini, and green beans into bite-sized pieces.
  2. Sauté Onions and Garlic: In a large pot, heat some olive oil over medium heat. Add the chopped onions and garlic. Sauté until translucent and fragrant.
  3. Add the Rest of the Veggies: Toss in your carrots, celery, zucchini, and green beans. Stir for about 5 minutes until they start to soften.
  4. Pour in the Diced Tomatoes and Broth: Add the diced tomatoes with their juice and the vegetable broth. Stir to combine.
  5. Season: Sprinkle in your herbs, salt, and pepper to taste, adding red pepper flakes if desired.
  6. Simmer: Lower the heat and let the soup simmer for about 20-30 minutes.
  7. Taste and Adjust: After simmering, taste and adjust seasoning, possibly adding a squeeze of fresh lemon juice.
  8. Serve: Ladle the soup into bowls and enjoy!
