Description

A warm and hearty soup filled with vegetables and optional meat, perfect for cozy evenings.


Ingredients

Scale
  • 4 cups broth (chicken or vegetable)
  • 2 medium potatoes, diced
  • 2 carrots, sliced
  • 1 onion, diced
  • 2 cups shredded cabbage
  • 1 cup diced meat (optional, pork or beef)
  • 1/4 cup fresh dill, chopped
  • 3 cloves garlic, minced
  • Salt and pepper to taste


Instructions

  1. In a large pot, heat some oil over medium heat and add diced onions and minced garlic. Cook until softened and fragrant.
  2. Add sliced carrots and diced potatoes, stirring to coat in the onion and garlic mixture.
  3. Pour in your choice of broth and bring to a gentle simmer.
  4. Incorporate shredded cabbage and any meat, if desired. Stir and let it simmer for 20-30 minutes.
  5. Season with salt, pepper, and fresh dill to taste.
  6. Ladle the soup into bowls and garnish with more fresh dill. Serve hot with crusty bread.

Notes

This soup can be made vegetarian by swapping meat for beans or lentils. It freezes well for up to three months.
