- 1 lb Ground Beef (or ground turkey)
- 1 Onion (diced)
- 2 cloves Garlic (minced)
- 1 cup Bell Peppers (diced)
- 1 can Cream of Mushroom Soup (or low-fat version)
- 1 cup Cheddar Cheese (shredded, or Monterey Jack)
- 3 cups Egg Noodles (or brown rice/quinoa for gluten-free)
- Salt and Pepper (to taste)
- Italian seasoning (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat until crumbled.
- Add chopped onions, garlic, and bell peppers; cook until soft (about 5-7 minutes).
- In a large bowl, combine the beef-vegetable mixture with the cream of mushroom soup, cheese, and egg noodles. Season with salt and pepper.
- Transfer everything to a greased casserole dish and bake uncovered for 25-30 minutes until the cheese is melted and bubbly.
- Let cool slightly before serving.
Notes
For richer flavor, brown the beef well and consider adding Worcestershire sauce. Leftovers can be stored in an airtight container for up to three days.
