Description

A hearty and comforting taco-inspired soup made effortlessly in your slow cooker.


Ingredients

Scale
  • 1 lb Ground Beef or Turkey
  • 1 can Canned Black Beans
  • 1 can Canned Corn
  • 1 can Diced Tomatoes
  • 2 tbsp Taco Seasoning
  • 4 cups Chicken or Vegetable Broth
  • 1 Bell Pepper, diced
  • 1 Onion, diced
  • 1 cup Shredded Cheese
  • 1 cup Sour Cream


Instructions

  1. In a skillet over medium heat, brown the ground beef or turkey until cooked through.
  2. Add the browned meat to your slow cooker along with black beans, corn, diced tomatoes, onion, bell pepper, broth, and taco seasoning.
  3. Stir well to combine all the ingredients.
  4. Set the slow cooker to low for 6-8 hours or high for 3-4 hours.
  5. Serve in bowls and top with shredded cheese and a dollop of sour cream. Optionally, add tortilla chips for crunch.

Notes

For a vegetarian version, substitute meat with additional beans or lentils, and use vegetable broth.
