A hearty and comforting taco-inspired soup made effortlessly in your slow cooker.
Ingredients

- 1 lb Ground Beef or Turkey
- 1 can Canned Black Beans
- 1 can Canned Corn
- 1 can Diced Tomatoes
- 2 tbsp Taco Seasoning
- 4 cups Chicken or Vegetable Broth
- 1 Bell Pepper, diced
- 1 Onion, diced
- 1 cup Shredded Cheese
- 1 cup Sour Cream
Instructions
- In a skillet over medium heat, brown the ground beef or turkey until cooked through.
- Add the browned meat to your slow cooker along with black beans, corn, diced tomatoes, onion, bell pepper, broth, and taco seasoning.
- Stir well to combine all the ingredients.
- Set the slow cooker to low for 6-8 hours or high for 3-4 hours.
- Serve in bowls and top with shredded cheese and a dollop of sour cream. Optionally, add tortilla chips for crunch.
Notes
For a vegetarian version, substitute meat with additional beans or lentils, and use vegetable broth.
