- 2 Chicken Breasts or Thighs (boneless, skinless)
- 1 box Stuffing Mix (traditional herb or cornbread)
- 1 cup Chicken Broth
- 1 can Cream of Chicken Soup
- 1 Onion (finely chopped)
- 2 stalks Celery (finely chopped)
- 1 tsp Salt
- 1/2 tsp Pepper
- 1 tsp Garlic Powder
- 1 tsp Thyme
Instructions
- Place chicken breasts or thighs at the bottom of the crockpot.
- In a bowl, mix stuffing mix with chicken broth, cream of chicken soup, chopped onion, and celery.
- Spread the stuffing mixture evenly over the chicken.
- Sprinkle salt, pepper, garlic powder, and thyme on top.
- Cover and cook on low for 6-8 hours or on high for 4-5 hours.
- Once cooked, shred the chicken with a fork and mix it with the stuffing before serving.
Notes
For extra flavor, consider adding fresh herbs or veggies in the last hour of cooking. Adjust seasonings to taste.
