Delicious crispy garlic butter parmesan smashed potatoes with a crunchy exterior and fluffy interior, perfect for any gathering or cozy dinner.

- 1.5 pounds Baby Potatoes
- 4 tablespoons Unsalted Butter
- 4 cloves Fresh Minced Garlic
- 1/2 cup Grated Parmesan Cheese
- 2 tablespoons Olive Oil (optional)
- 1 teaspoon Salt
- 1/2 teaspoon Pepper
- Fresh Herbs (e.g. Parsley or Chives)
Instructions
- Bring a pot of salted water to a boil. Add baby potatoes and cook until fork-tender (15-20 minutes).
- Drain the potatoes and let them cool slightly.
- Preheat your oven to 425°F (220°C).
- On a parchment-lined baking sheet, place the potatoes and gently smash each one until about half an inch thick.
- In a small saucepan, melt butter over medium heat, add minced garlic, and sauté until fragrant (about 30 seconds).
- Brush the smashed potatoes generously with garlic butter and sprinkle with salt, pepper, and parmesan.
- Roast in the oven for 25-30 minutes, or until golden brown and crispy.
- Remove from the oven and sprinkle with fresh herbs before serving.
Notes
For a lighter version, substitute butter with olive oil. You can also mix in different cheeses or herbs based on preference.
