Ingredients
- Pasta (penne or fettuccine)
- Smoked Sausage (kielbasa or andouille)
- Heavy Cream
- Chicken Broth
- Garlic (fresh cloves)
- Onion (sweet)
- Parmesan Cheese (freshly grated)
- Spinach or Kale
- Olive Oil
- Salt
- Pepper
- Italian Seasoning
Instructions
- Cook the pasta in boiling water with a pinch of salt according to package instructions until al dente.
- While the pasta cooks, heat olive oil in a skillet over medium heat. Slice the smoked sausage and add it to the pan, cooking until crispy and golden.
- Add chopped garlic and onion to the sausage, sautéing until soft and fragrant.
- Pour in the heavy cream and chicken broth, bring to a low simmer, then mix in the grated parmesan cheese and stir until smooth.
- Drain the pasta, reserving some pasta water. Add the pasta to the skillet with leafy greens, tossing everything together. If desired, add reserved pasta water for extra creaminess.
- Season with salt, pepper, and Italian herbs to taste. Serve immediately with extra parmesan on top.
