Description

A delicious and versatile pasta sauce featuring the sweetness of roasted garlic balanced with zesty lemon, perfect for pasta dishes or as a dip.


Ingredients

  • 10 cloves fresh garlic
  • 1 cup heavy cream
  • 1/4 cup freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 400°F (200°C). Slice off the top of the whole bulb of garlic, drizzle with olive oil, and wrap it in aluminum foil. Roast for about 30-35 minutes until golden and soft.
  2. Once cool, squeeze the roasted cloves into a bowl and mash until creamy.
  3. In a medium saucepan over low heat, warm the heavy cream gently. Stir in the mashed garlic, lemon juice, and lemon zest until combined and warm.
  4. Mix in the grated Parmesan cheese, stirring until fully melted.
  5. Add salt and pepper to taste, adjusting lemon juice for brightness as desired.
  6. Toss the sauce with freshly cooked pasta and enjoy immediately.

Notes

Use fresh garlic for best results and avoid boiling the cream. This sauce can be made ahead and stored in the fridge for up to three days.
