Description

A rich and creamy soup combining tender potatoes and savory kielbasa sausage, perfect for chilly evenings.


Ingredients

  • Kielbasa sausage (regular or turkey)
  • Yukon Gold or Russet potatoes
  • Onion
  • Garlic
  • Vegetable or chicken broth
  • Heavy cream (or half-and-half)
  • Thyme
  • Salt
  • Pepper
  • Optional: Paprika or red pepper flakes


Instructions

  1. Chop the potatoes and onions, and mince the garlic.
  2. Lightly brown the kielbasa in a skillet (optional).
  3. Combine potatoes, onions, garlic, and kielbasa in the crockpot.
  4. Pour in the broth and seasonings, and stir gently.
  5. Cover and cook on low for 6-8 hours (or high for 3-4 hours).
  6. About 30 minutes before serving, stir in the heavy cream.
  7. Taste and adjust seasonings as needed.

Notes

For a thicker soup, mash some of the potatoes before adding cream. Can be garnished with fresh parsley or crumbled bacon.
