A rich and creamy soup combining tender potatoes and savory kielbasa sausage, perfect for chilly evenings.
Ingredients
- Kielbasa sausage (regular or turkey)
- Yukon Gold or Russet potatoes
- Onion
- Garlic
- Vegetable or chicken broth
- Heavy cream (or half-and-half)
- Thyme
- Salt
- Pepper
- Optional: Paprika or red pepper flakes
Instructions
- Chop the potatoes and onions, and mince the garlic.
- Lightly brown the kielbasa in a skillet (optional).
- Combine potatoes, onions, garlic, and kielbasa in the crockpot.
- Pour in the broth and seasonings, and stir gently.
- Cover and cook on low for 6-8 hours (or high for 3-4 hours).
- About 30 minutes before serving, stir in the heavy cream.
- Taste and adjust seasonings as needed.
Notes
For a thicker soup, mash some of the potatoes before adding cream. Can be garnished with fresh parsley or crumbled bacon.
