Description

A rich and hearty soup combining tender clams with creamy, fluffy potatoes, seasoned with aromatic herbs for a comforting dish.


Ingredients

  • 2 cups clams (fresh or canned)
  • 4 medium Yukon Gold potatoes, peeled and diced
  • 1 sweet onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1 cup heavy cream
  • 4 cups chicken broth (or vegetable broth)
  • 1 teaspoon fresh thyme
  • Salt and pepper to taste


Instructions

  1. Prepare your ingredients by washing, peeling, and dicing the potatoes and chopping the onion and garlic.
  2. Sauté the onion in butter over medium heat until translucent, then add garlic and sauté for another minute until fragrant.
  3. Add the diced potatoes and stir for a couple of minutes to combine flavors.
  4. Pour in the chicken broth and simmer until the potatoes are tender (15-20 minutes).
  5. Stir in the clams and heavy cream, simmer gently for another 5 minutes.
  6. Season with salt, pepper, and fresh thyme. Serve warm with crusty bread.

Notes

Use fresh clams for the best flavor. Adjust the thickness of the soup by varying the amount of broth used.
