- 1 tsp fresh parsley or thyme
- Salt and pepper to taste

Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery. Sauté these until they are soft and fragrant, about 5-7 minutes.
- Stir in the garlic and cook for another minute until aromatic.
- Toss in the diced tomatoes and drained beans, stirring everything together to meld flavors for a couple of minutes.
- Add the vegetable broth and bring it to a gentle boil. Reduce heat to let it simmer.
- Sprinkle in salt, pepper, and chosen herbs, adjusting to taste.
- Let the soup simmer for 20-30 minutes to allow flavors to develop.
- Ladle the soup into bowls and top with fresh parsley if desired. Serve with crusty bread or a side salad.
Notes
Use fresh ingredients for the best flavor. You can blend half of the soup for a creamy version.
