Description

A hearty and nourishing bowl of vegetarian soup made with fresh vegetables, aromatic herbs, and flavorful broth, perfect for chilly evenings or meal prep.


Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 can seasoned beans (chickpeas or black beans)
  • 1 tsp fresh parsley or thyme
  • Salt and pepper to taste
  • Red pepper flakes (optional)


Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery. Sauté these until they are soft and fragrant, about 5-7 minutes.
  2. Stir in the garlic and cook for another minute until aromatic.
  3. Toss in the diced tomatoes and drained beans, stirring everything together to meld flavors for a couple of minutes.
  4. Add the vegetable broth and bring it to a gentle boil. Reduce heat to let it simmer.
  5. Sprinkle in salt, pepper, and chosen herbs, adjusting to taste.
  6. Let the soup simmer for 20-30 minutes to allow flavors to develop.
  7. Ladle the soup into bowls and top with fresh parsley if desired. Serve with crusty bread or a side salad.

Notes

Use fresh ingredients for the best flavor. You can blend half of the soup for a creamy version.
