- 1 lb Italian sausage, cooked and browned
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup diced carrots
- 1 cup chopped celery
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- Fresh thyme and parsley for garnish
- Salt and pepper, to taste
Instructions
- In a large pot, cook the sausage over medium heat until browned.
- Add chopped onions, garlic, carrots, and celery, cooking for about five minutes until tender.
- Add the diced potatoes and stir.
- Slowly add the broth, bring to a gentle boil, then reduce heat and let simmer.
- After about 20 minutes, stir in the heavy cream and season with salt and pepper, letting it simmer for an additional five minutes.
- Garnish with fresh thyme and parsley before serving.
