A classic chicken noodle soup that warms the soul, filled with tender chicken, hearty noodles, and flavorful broth. Perfect for chilly evenings.

- 2 boneless, skinless chicken breasts or thighs
- 2 cups egg noodles
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, diced
- 6 cups low-sodium chicken broth
- 1 tsp dried thyme
- 1 tsp dried parsley
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Chop the chicken into bite-sized pieces. If using rotisserie chicken, shred it and set it aside.
- In a large pot, heat a drizzle of olive oil over medium heat. Add the diced onions, carrots, and celery. Sauté until soft, about 5-7 minutes.
- Pour in the chicken broth and bring to a gentle boil. Add the chicken pieces and let it simmer for around 15 minutes until cooked through.
- Stir in the noodles and cook according to package directions, usually about 8-10 minutes.
- Add salt, pepper, and herbs to taste. Stir everything together and serve hot, optionally with fresh bread on the side.
Notes
For a healthier option, use leftover rotisserie chicken and low-sodium broth. Store leftovers in an airtight container in the fridge or freeze for up to 3 months.
