Description

A classic chicken noodle soup that warms the soul, filled with tender chicken, hearty noodles, and flavorful broth. Perfect for chilly evenings.


Ingredients

  • 2 boneless, skinless chicken breasts or thighs
  • 2 cups egg noodles
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, diced
  • 6 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Salt and pepper to taste
  • Olive oil for sautéing


Instructions

  1. Chop the chicken into bite-sized pieces. If using rotisserie chicken, shred it and set it aside.
  2. In a large pot, heat a drizzle of olive oil over medium heat. Add the diced onions, carrots, and celery. Sauté until soft, about 5-7 minutes.
  3. Pour in the chicken broth and bring to a gentle boil. Add the chicken pieces and let it simmer for around 15 minutes until cooked through.
  4. Stir in the noodles and cook according to package directions, usually about 8-10 minutes.
  5. Add salt, pepper, and herbs to taste. Stir everything together and serve hot, optionally with fresh bread on the side.

Notes

For a healthier option, use leftover rotisserie chicken and low-sodium broth. Store leftovers in an airtight container in the fridge or freeze for up to 3 months.
