- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 cup butter, melted
- 1 cup milk
- 1 large egg
- 1/2 cup brown sugar
- 1 cup powdered sugar (for glaze, optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Line your muffin tin with paper liners or spray with non-stick spray.
- In a bowl, whisk together flour, granulated sugar, baking powder, salt, and cinnamon.
- In another bowl, whisk together melted butter, milk, and egg until smooth.
- Combine wet ingredients with dry ingredients, stirring until just combined.
- Make the filling by mixing brown sugar and cinnamon in a small bowl.
- Spoon a tablespoon of muffin batter into each cup, sprinkle with cinnamon sugar mixture, then add another tablespoon of batter on top.
- Use a toothpick to swirl the filling through the batter gently.
- Bake for 15-18 minutes, or until a toothpick comes out clean.
- Let cool, then drizzle with glaze made from powdered sugar and milk, if desired.
Notes
Don’t overmix the batter to keep muffins fluffy. You can store leftovers in an airtight container for a few days.
