Ingredients

- Cupcake mix (vanilla or chocolate)
- 3 eggs (or applesauce for a vegan option)
- 1/2 cup vegetable oil (or melted coconut oil)
- Green food coloring
- 1/2 cup unsalted butter (or vegan butter)
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- Candies and sprinkles (mini M&Ms, gumdrops, edible glitter)
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake tray with liners.
- Mix the cupcake ingredients according to package instructions and fill the liners two-thirds full.
- Bake for 18-20 minutes or until a toothpick comes out clean. Let cool on a wire rack.
- In a bowl, cream together softened butter and powdered sugar. Add vanilla and green food coloring until the desired shade is reached.
- Once cooled, frost cupcakes generously using a piping bag fitted with a star tip.
- Decorate with candies and sprinkles to resemble ornaments and lights.
