Instructions
- Preheat your oven to 200°F (about 95°C).
- Line two baking sheets with parchment paper.
- In a large clean bowl, whip the egg whites until frothy using an electric mixer.
- Add the cream of tartar and beat until soft peaks form.
- Gradually sprinkle in the granulated sugar while the mixer is running until stiff peaks form.
- Mix in the vanilla extract and fold in food coloring if desired.
- Pipe dollops of meringue onto the prepared baking sheets.
- Bake for about 1.5 hours until dry and crisp. Turn off the oven and leave the cookies inside to cool completely.
