Ingredients

  • 1 cup Powdered Sugar
  • 1/2 cup Coconut Flour
  • 1 cup Chocolate Chips
  • 1 cup Shredded Coconut (or nuts)

Instructions

  1. In a bowl, mix the peanut butter, powdered sugar, coconut flour, vanilla, and salt until smooth.
  2. Refrigerate the mixture for about 30 minutes.
  3. Scoop out small portions and roll into bite-sized balls.
  4. Melt the chocolate chips in a microwave-safe bowl, stirring until smooth.
  5. Dip each ball into the melted chocolate, then roll in shredded coconut or your choice of coating.
  6. Place on a parchment-lined tray and let cool until the chocolate hardens.
