Description

Delightful chocolate chip bars combined with the moisture of zucchini, creating a healthy treat that’s perfect for any occasion.

Ingredients

Scale
  • 2 cups grated zucchini
  • 2 cups all-purpose flour (or whole wheat flour)
  • 1 cup granulated sugar (or brown sugar)
  • 2 eggs (or flax eggs for vegan version)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon (or nutmeg)
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips (or dark/milk chocolate chips)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13-inch baking pan or line it with parchment paper.
  3. In a large bowl, whisk together the flour, baking powder, salt, and cinnamon.
  4. In another bowl, mix sugar and eggs until combined. Add grated zucchini and vanilla extract.
  5. Gradually stir the dry mixture into the wet mixture until just combined.
  6. Fold in the chocolate chips.
  7. Spread the batter into the prepared baking pan.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  9. Let cool before slicing into bars.

Notes

Ensure to pack the grated zucchini and squeeze out excess moisture if it’s watery. Consider adding nuts for extra crunch.
