Description

A refreshing and colorful salad combining chickpeas, creamy avocado, and tangy feta for a nutritious meal.


Ingredients

  • Canned chickpeas
  • Avocado
  • Feta cheese
  • Cucumber
  • Cherry tomatoes
  • Red onion
  • Olive oil
  • Lemon juice
  • Salt
  • Pepper


Instructions

  1. Drain and rinse the canned chickpeas.
  2. Dice the cucumber, slice the cherry tomatoes in half, and finely chop the red onion.
  3. Cut the avocado into bite-sized pieces.
  4. In a large bowl, combine the chickpeas, avocado, cucumber, cherry tomatoes, feta, and onion.
  5. Drizzle olive oil and lemon juice over the mix, then season with salt and pepper. Gently toss everything until just combined.
  6. Serve immediately or chill in the fridge for 30 minutes to enhance flavors.
