A quick and healthy Chicken Zucchini Stir Fry featuring tender chicken pieces, fresh zucchini, and your choice of colorful veggies, all sautéed to perfection.

- 1 lb Chicken Breast, cut into bite-sized pieces
- 2 Zucchini, sliced into half-moons
- 1 Bell Pepper, chopped
- 2 cloves Garlic, minced
- 2 tbsp Soy Sauce
- 1 tbsp Sesame Oil
- 1 tsp Ginger, freshly grated or minced
- Optional Add-ins: Broccoli, carrots, or snap peas
Instructions
- Prep Your Ingredients: Chop all ingredients and have them ready to go.
- Cook the Chicken: Heat a skillet over medium-high heat, add sesame oil, and cook chicken until golden brown (about 5-7 minutes). Remove and set aside.
- Sauté the Veggies: In the same skillet, add more oil, garlic, and ginger. Sauté for 30 seconds, then add zucchini and bell peppers. Stir-fry for 3-4 minutes.
- Combine and Sauce It Up: Return chicken to the skillet, add soy sauce, and mix. Cook for another minute.
- Serve: Enjoy your stir fry hot, optionally over rice or noodles.
Notes
Don’t overcrowd the pan. Experiment with different stir-fry sauces to vary flavors.
