Ingredients

- 2 boneless, skinless chicken breasts
- 8 oz fresh mushrooms (button or cremini)
- 1 sweet onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1 cup chicken broth
- 1 cup sour cream (or Greek yogurt)
- 1 tablespoon Dijon mustard
- 8 oz egg noodles (or pasta of your choice)
Instructions
- Heat butter and oil in a pan. Cut chicken into bite-sized pieces, season with salt and pepper, and cook until golden brown (5-7 minutes). Transfer to a plate.
- Add more butter if needed, then sauté chopped onions and mushrooms until soft and golden. Add minced garlic and cook for another minute.
- Pour in chicken broth and scrape bits off the bottom, letting it simmer for a couple of minutes. Stir in Dijon mustard and return chicken to the pan.
- Lower heat and fold in sour cream until mixed well and heated through.
- Cook egg noodles according to package instructions. Serve Chicken Stroganoff over noodles and garnish with fresh parsley if desired.
Notes
Don’t overcook the chicken; use fresh ingredients for better flavor. Adjust sauce consistency with chicken broth if too thick.
