Description

A cozy comfort meal featuring tender chicken in a creamy mushroom sauce served over fluffy noodles.


Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 8 oz fresh mushrooms (button or cremini)
  • 1 sweet onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 cup chicken broth
  • 1 cup sour cream (or Greek yogurt)
  • 1 tablespoon Dijon mustard
  • 8 oz egg noodles (or pasta of your choice)


Instructions

  1. Heat butter and oil in a pan. Cut chicken into bite-sized pieces, season with salt and pepper, and cook until golden brown (5-7 minutes). Transfer to a plate.
  2. Add more butter if needed, then sauté chopped onions and mushrooms until soft and golden. Add minced garlic and cook for another minute.
  3. Pour in chicken broth and scrape bits off the bottom, letting it simmer for a couple of minutes. Stir in Dijon mustard and return chicken to the pan.
  4. Lower heat and fold in sour cream until mixed well and heated through.
  5. Cook egg noodles according to package instructions. Serve Chicken Stroganoff over noodles and garnish with fresh parsley if desired.

Notes

Don’t overcook the chicken; use fresh ingredients for better flavor. Adjust sauce consistency with chicken broth if too thick.
