- 2 cups cooked and shredded chicken breast
- 1 sheet puff pastry or biscuit dough
- 4 oz cream cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 tbsp fresh parsley (chopped)
- 2 cloves garlic (minced)
- Salt and black pepper to taste
- 1 egg (beaten, for egg wash)
- Olive oil or butter for sautéing
- Optional: sun-dried tomatoes, spinach, cooked bacon bits, or mushrooms
Instructions
- Preheat oven to 400°F. Shred cooked chicken into small pieces.
- In a skillet, warm olive oil, add minced garlic, and optional veggies; sauté until tender. Stir in cream cheese, mozzarella, Parmesan, parsley, and chicken. Season with salt and pepper.
- Lightly flour surface and roll out dough into 4 to 5 inch squares.
- Spoon a tablespoon of filling into the center, fold dough over and pinch edges to seal.
- Brush with beaten egg or milk, sprinkle extra Parmesan if desired, and bake for 16 to 20 minutes until golden.
- Let sit for 5 minutes before serving warm.
Notes
Use rotisserie chicken for quick prep. Chill shaped pillows briefly if the dough is sticky. Avoid overfilling for easier sealing.
