Description

Comforting Chicken Pillows are savory parcels of tender chicken and melty cheese wrapped in flaky dough and baked to golden perfection.


Ingredients

  • 2 cups cooked and shredded chicken breast
  • 1 sheet puff pastry or biscuit dough
  • 4 oz cream cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp fresh parsley (chopped)
  • 2 cloves garlic (minced)
  • Salt and black pepper to taste
  • 1 egg (beaten, for egg wash)
  • Olive oil or butter for sautéing
  • Optional: sun-dried tomatoes, spinach, cooked bacon bits, or mushrooms


Instructions

  1. Preheat oven to 400°F. Shred cooked chicken into small pieces.
  2. In a skillet, warm olive oil, add minced garlic, and optional veggies; sauté until tender. Stir in cream cheese, mozzarella, Parmesan, parsley, and chicken. Season with salt and pepper.
  3. Lightly flour surface and roll out dough into 4 to 5 inch squares.
  4. Spoon a tablespoon of filling into the center, fold dough over and pinch edges to seal.
  5. Brush with beaten egg or milk, sprinkle extra Parmesan if desired, and bake for 16 to 20 minutes until golden.
  6. Let sit for 5 minutes before serving warm.

Notes

Use rotisserie chicken for quick prep. Chill shaped pillows briefly if the dough is sticky. Avoid overfilling for easier sealing.
