Description

A cozy and comforting chicken noodle soup infused with turmeric and ginger for a flavorful and aromatic experience.


Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs
  • 8 oz egg noodles (or gluten-free pasta)
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp ground turmeric
  • 2 tsp fresh ginger, minced
  • 6 cups chicken broth (or vegetable broth)
  • Salt and pepper to taste
  • 1 tsp dried thyme
  • Olive oil


Instructions

  1. In a large pot, add a splash of olive oil. Sauté the chopped onion, carrots, and celery for about 5-7 minutes until softened.
  2. Add in the minced garlic, turmeric, and ginger. Cook for another minute.
  3. Pour in the chicken broth and bring it to a boil, then reduce to a simmer.
  4. Add the chicken and let it simmer until fully cooked, about 15-20 minutes.
  5. Remove the chicken, shred it, and return it to the pot. Add the egg noodles and cook according to package instructions, around 7 minutes.
  6. Season the soup with salt and pepper to taste and serve warm.

Notes

For extra nutrients, add spinach or kale towards the end. Adjust the spice level with more ginger if desired.
