Ingredients

- 2 cups boneless skinless chicken (breasts or thighs)
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 6 cups chicken broth
- 2 cups egg noodles
- 1 teaspoon fresh thyme
- 1 tablespoon fresh parsley
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Chop the onion, celery, and carrots into small pieces.
- In a large pot, add a drizzle of olive oil and heat. Cook the chicken until browned, then remove and set aside.
- In the same pot, add more oil and sauté the chopped onions, carrots, and celery until the onions become translucent.
- Pour in the chicken broth and bring to a gentle boil.
- Return the chicken to the pot and add the noodles. Let it simmer until the noodles are tender (about 8-10 minutes).
- Finish with fresh thyme, parsley, and sprinkle salt and pepper to taste, stirring everything in.
- Ladle the soup into bowls and enjoy!
Notes
Don’t overcook the noodles and use fresh herbs for the best flavor. Store noodles and soup separately if you have leftovers.
