Description

A heartwarming classic that combines tender chicken, wholesome veggies, and noodles in a soothing broth.


Ingredients

Scale
  • 2 cups boneless skinless chicken (breasts or thighs)
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 6 cups chicken broth
  • 2 cups egg noodles
  • 1 teaspoon fresh thyme
  • 1 tablespoon fresh parsley
  • Salt and pepper to taste
  • Olive oil for cooking


Instructions

  1. Chop the onion, celery, and carrots into small pieces.
  2. In a large pot, add a drizzle of olive oil and heat. Cook the chicken until browned, then remove and set aside.
  3. In the same pot, add more oil and sauté the chopped onions, carrots, and celery until the onions become translucent.
  4. Pour in the chicken broth and bring to a gentle boil.
  5. Return the chicken to the pot and add the noodles. Let it simmer until the noodles are tender (about 8-10 minutes).
  6. Finish with fresh thyme, parsley, and sprinkle salt and pepper to taste, stirring everything in.
  7. Ladle the soup into bowls and enjoy!

Notes

Don’t overcook the noodles and use fresh herbs for the best flavor. Store noodles and soup separately if you have leftovers.
