Description

A comforting and delicious one-pot soup loaded with creamy tomato, cheesy tortellini, and a touch of green.


Ingredients

  • Fresh or frozen cheese-filled tortellini
  • Canned crushed tomatoes
  • Vegetable broth (or chicken broth)
  • Heavy cream (or half-and-half)
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Freshly grated Parmesan cheese
  • Spinach or kale


Instructions

  1. In a large pot, heat some olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until they’re soft and fragrant.
  2. Pour in the crushed tomatoes, stirring in the vegetable broth. Bring to a gentle simmer.
  3. Mix in the Italian seasoning and let bubble for about 5 minutes.
  4. Add the tortellini and cook as per package instructions until tender.
  5. Stir in the heavy cream until well combined.
  6. Toss in the spinach and let it wilt down.
  7. Ladle the soup into bowls and finish with a sprinkle of freshly grated Parmesan cheese.

Notes

Use fresh tortellini for best flavor. Leftovers taste even better, so consider making a big batch.
