- Fresh or frozen cheese-filled tortellini
- Canned crushed tomatoes
- Vegetable broth (or chicken broth)
- Heavy cream (or half-and-half)
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Freshly grated Parmesan cheese
- Spinach or kale
Instructions
- In a large pot, heat some olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until they’re soft and fragrant.
- Pour in the crushed tomatoes, stirring in the vegetable broth. Bring to a gentle simmer.
- Mix in the Italian seasoning and let bubble for about 5 minutes.
- Add the tortellini and cook as per package instructions until tender.
- Stir in the heavy cream until well combined.
- Toss in the spinach and let it wilt down.
- Ladle the soup into bowls and finish with a sprinkle of freshly grated Parmesan cheese.
Notes
Use fresh tortellini for best flavor. Leftovers taste even better, so consider making a big batch.
