A warm, creamy dish that combines tender tortellini, juicy chicken, and a delightful blend of cheeses, perfect for a cozy night in.


Ingredients

  • 8 ounces cheese-filled or chicken-flavored tortellini
  • 2 cups cooked shredded chicken (rotisserie is great)
  • 1 can (10.5 ounces) cream of chicken soup
  • 4 ounces cream cheese
  • 1 cup grated sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup frozen vegetables (peas, broccoli, or spinach)
  • 1 teaspoon Italian seasoning


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the cooked chicken, cream of chicken soup, cream cheese, and half of the cheddar and Parmesan cheese. Stir until mixed.
  3. Cook the tortellini according to package instructions until al dente. Drain and add to the chicken mixture with frozen vegetables.
  4. Gently fold the mixture until the tortellini is well-coated.
  5. Pour the mixture into a small baking dish (8×8) and spread evenly.
  6. Top with the remaining cheddar and Parmesan cheese.
  7. Bake for about 25-30 minutes, until cheese is bubbly and golden brown.
  8. Let it cool slightly before serving, garnishing with fresh parsley if desired.

Notes

Make it ahead and store in the fridge. Use freshly grated cheese for the best melting experience.
