- 8 ounces cheese-filled or chicken-flavored tortellini
- 2 cups cooked shredded chicken (rotisserie is great)
- 1 can (10.5 ounces) cream of chicken soup
- 4 ounces cream cheese
- 1 cup grated sharp cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 cup frozen vegetables (peas, broccoli, or spinach)
- 1 teaspoon Italian seasoning
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the cooked chicken, cream of chicken soup, cream cheese, and half of the cheddar and Parmesan cheese. Stir until mixed.
- Cook the tortellini according to package instructions until al dente. Drain and add to the chicken mixture with frozen vegetables.
- Gently fold the mixture until the tortellini is well-coated.
- Pour the mixture into a small baking dish (8×8) and spread evenly.
- Top with the remaining cheddar and Parmesan cheese.
- Bake for about 25-30 minutes, until cheese is bubbly and golden brown.
- Let it cool slightly before serving, garnishing with fresh parsley if desired.
Notes
Make it ahead and store in the fridge. Use freshly grated cheese for the best melting experience.
