- 1 lb lean ground beef
- 1 yellow or white onion, chopped
- 1 green bell pepper, diced
- 1 tsp garlic powder
- 2 cups beef broth
- 2 cups pasta (shells or macaroni)
- 4 oz cream cheese
- 1 cup shredded provolone or mozzarella cheese
Instructions
- In a large skillet over medium heat, brown the ground beef until it’s fully cooked, breaking it apart as it cooks. Drain any excess fat.
- Toss in the chopped onion and diced green pepper. Sauté for about 5 minutes until they are soft and fragrant.
- Sprinkle garlic powder, salt, and pepper over the mixture. Stir everything together, allowing the flavors to meld.
- Pour in the beef broth, and bring it to a slight simmer.
- Add the pasta into the skillet, stirring it in so it’s evenly coated in the broth mixture.
- Once the pasta has cooked (about 10 minutes), stir in the cream cheese until melted and mixed well.
- Remove the skillet from the heat and sprinkle your shredded cheese on top. Cover briefly to let the cheese melt beautifully.
Notes
Use lean ground beef to keep it lighter and avoid overcooking the vegetables for a satisfying crunch.
