Description

A comforting dish featuring creamy, caramelized onions tossed with your favorite pasta, garlic, and finished with Parmesan cheese.


Ingredients

  • 1 lb pasta (spaghetti or fettuccine)
  • 2 large yellow onions, thinly sliced
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 2-3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • Salt & pepper to taste


Instructions

  1. Cook the pasta according to package instructions until al dente. Reserve some pasta water for later.
  2. In a skillet, heat olive oil and butter over medium-low heat. Add thinly sliced onions and a pinch of salt. Cook for 25-30 minutes until golden and sweet.
  3. Add minced garlic to the onions and stir for a minute until fragrant.
  4. Incorporate the drained pasta into the skillet with onions, adding reserved pasta water if needed.
  5. Turn off the heat and mix in grated Parmesan cheese.
  6. Adjust seasoning with salt and pepper, to taste.
  7. Plate and garnish with additional cheese or herbs if desired.
