- 1 lb pasta (spaghetti or fettuccine)
- 2 large yellow onions, thinly sliced
- 2 tbsp olive oil
- 2 tbsp butter
- 2-3 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- Salt & pepper to taste
Instructions
- Cook the pasta according to package instructions until al dente. Reserve some pasta water for later.
- In a skillet, heat olive oil and butter over medium-low heat. Add thinly sliced onions and a pinch of salt. Cook for 25-30 minutes until golden and sweet.
- Add minced garlic to the onions and stir for a minute until fragrant.
- Incorporate the drained pasta into the skillet with onions, adding reserved pasta water if needed.
- Turn off the heat and mix in grated Parmesan cheese.
- Adjust seasoning with salt and pepper, to taste.
- Plate and garnish with additional cheese or herbs if desired.
