Description

A delightful mix of fresh flavors, this Caprese Pasta Salad is a fusion of classic Italian Caprese salad and pasta, perfect for a light meal or as a side dish.

Ingredients

Scale
  • 8 ounces pasta (penne or fusilli)
  • 1 cup cherry tomatoes, halved
  • 8 ounces fresh mozzarella (bocconcini or ciliegine)
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper, to taste

Instructions

  1. Cook the pasta: Bring a pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water.
  2. Prep the veggies: While the pasta cooks, slice the cherry tomatoes in half and chop the fresh basil.
  3. Mix the ingredients together: In a large bowl, combine the cooled pasta, tomatoes, mozzarella, and basil.
  4. Dress it up: Drizzle the olive oil and balsamic vinegar over the salad. Toss gently to coat everything evenly.
  5. Season to taste: Add salt and pepper to your preference, mixing well.
  6. Chill or serve: Serve immediately or let it chill for about 30 minutes before serving to enhance flavors.

Notes

Use high-quality olive oil for richer flavor. Let it sit in the fridge for enhanced flavors. For a kick, add red pepper flakes.
