Description
A creamy, garlicky dish combining tender orzo, juicy chicken, and rich Boursin cheese for a cozy weeknight dinner.

- 1 cup orzo
- 1 lb boneless, skinless chicken breast
- 8 oz Boursin cheese
- 2 cloves garlic, minced
- 2 cups spinach (fresh or frozen)
- 2 cups low-sodium chicken broth
- 2 tbsp olive oil
Instructions
- In a skillet, heat olive oil over medium heat. Season chicken with salt and pepper, and cook for 6-7 minutes each side until cooked through. Remove and set aside.
- In the same skillet, add minced garlic and sauté for 1 minute. Add spinach and let it wilt.
- Add orzo and chicken broth to the skillet. Bring to a boil and cook, stirring occasionally, for 9-10 minutes until orzo is al dente.
- Reduce heat and mix in Boursin cheese until melted and creamy.
- Slice chicken and arrange on top of the orzo, warming for an additional minute.
- Serve hot, optionally garnished with extra cheese or herbs.
Notes
Don’t skimp on the garlic for maximum flavor. This recipe can easily be doubled for larger gatherings.
