Boursin Orzo with Chicken

Description

A creamy, garlicky dish combining tender orzo, juicy chicken, and rich Boursin cheese for a cozy weeknight dinner.


Ingredients

Scale
  • 1 cup orzo
  • 1 lb boneless, skinless chicken breast
  • 8 oz Boursin cheese
  • 2 cloves garlic, minced
  • 2 cups spinach (fresh or frozen)
  • 2 cups low-sodium chicken broth
  • 2 tbsp olive oil


Instructions

  1. In a skillet, heat olive oil over medium heat. Season chicken with salt and pepper, and cook for 6-7 minutes each side until cooked through. Remove and set aside.
  2. In the same skillet, add minced garlic and sauté for 1 minute. Add spinach and let it wilt.
  3. Add orzo and chicken broth to the skillet. Bring to a boil and cook, stirring occasionally, for 9-10 minutes until orzo is al dente.
  4. Reduce heat and mix in Boursin cheese until melted and creamy.
  5. Slice chicken and arrange on top of the orzo, warming for an additional minute.
  6. Serve hot, optionally garnished with extra cheese or herbs.

Notes

Don’t skimp on the garlic for maximum flavor. This recipe can easily be doubled for larger gatherings.
