- 1 lb ground beef
- 8 corn or flour tortillas
- 2 cups enchilada sauce
- 2 cups shredded cheddar cheese
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 tsp cumin
- 1 tbsp chili powder
- 1 tsp paprika
- 1/2 cup sour cream (optional)
Instructions
- Brown the ground beef in a large skillet over medium heat and add chopped onion and minced garlic. Cook until softened.
- Add chopped bell pepper, cumin, chili powder, and paprika to the beef mixture; cook until bell peppers are tender.
- Spread a small amount of enchilada sauce on the bottom of a baking dish. Layer tortillas, half of the beef mixture, and cheese. Repeat layers.
- Preheat oven to 350°F (175°C). Bake for 25-30 minutes until cheese is bubbly and golden brown.
- Let cool slightly, then serve with sour cream and toppings like salsa or guacamole.
Notes
For a spicy kick, feel free to mix in pepper jack cheese or add diced jalapeños to the meat mixture.
