Description

A savory and cheesy layered dish combining ground beef, tortillas, and tangy enchilada sauce for a cozy and comforting meal.


Ingredients

  • 1 lb ground beef
  • 8 corn or flour tortillas
  • 2 cups enchilada sauce
  • 2 cups shredded cheddar cheese
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 tsp cumin
  • 1 tbsp chili powder
  • 1 tsp paprika
  • 1/2 cup sour cream (optional)


Instructions

  1. Brown the ground beef in a large skillet over medium heat and add chopped onion and minced garlic. Cook until softened.
  2. Add chopped bell pepper, cumin, chili powder, and paprika to the beef mixture; cook until bell peppers are tender.
  3. Spread a small amount of enchilada sauce on the bottom of a baking dish. Layer tortillas, half of the beef mixture, and cheese. Repeat layers.
  4. Preheat oven to 350°F (175°C). Bake for 25-30 minutes until cheese is bubbly and golden brown.
  5. Let cool slightly, then serve with sour cream and toppings like salsa or guacamole.

Notes

For a spicy kick, feel free to mix in pepper jack cheese or add diced jalapeños to the meat mixture.
