Basil Pesto Chicken Pasta

Description

A comforting and flavorful fusion of tender chicken, vibrant basil pesto, and perfectly cooked pasta, ideal for busy weeknights or a casual dinner.


Ingredients

Scale
  • Any type of pasta (spaghetti or penne recommended)
  • 2 boneless, skinless chicken breasts
  • 1 cup basil pesto (store-bought or homemade)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 cup freshly grated parmesan cheese
  • Salt and pepper to taste


Instructions

  1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving a bit of pasta water.
  2. In a skillet, heat olive oil over medium heat. Season chicken with salt and pepper. Cook for about 6-7 minutes on each side or until cooked through. Remove and let rest before slicing.
  3. In the same skillet, add more olive oil and sauté minced garlic for about a minute until fragrant.
  4. Add the cooked pasta and sliced chicken back into the skillet. Pour in the basil pesto and a splash of reserved pasta water. Toss until well-coated.
  5. Serve with freshly grated parmesan cheese and extra basil for garnish.

Notes

Feel free to add veggies like spinach, zucchini, or cherry tomatoes for more color and nutrition.
