- Any type of pasta (spaghetti or penne recommended)
- 2 boneless, skinless chicken breasts
- 1 cup basil pesto (store-bought or homemade)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 cup freshly grated parmesan cheese
- Salt and pepper to taste
Instructions
- Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving a bit of pasta water.
- In a skillet, heat olive oil over medium heat. Season chicken with salt and pepper. Cook for about 6-7 minutes on each side or until cooked through. Remove and let rest before slicing.
- In the same skillet, add more olive oil and sauté minced garlic for about a minute until fragrant.
- Add the cooked pasta and sliced chicken back into the skillet. Pour in the basil pesto and a splash of reserved pasta water. Toss until well-coated.
- Serve with freshly grated parmesan cheese and extra basil for garnish.
Notes
Feel free to add veggies like spinach, zucchini, or cherry tomatoes for more color and nutrition.
