Ingredients

  • 1 lb boneless skinless chicken breast
  • 1 cup rice or quinoa
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cucumber, sliced
  • 1 cup carrots, julienned
  • 2 green onions, chopped
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1-2 tbsp sriracha (to taste)
  • Salt and pepper to taste
  • Oil for cooking


Instructions

  1. Cook the rice or quinoa according to package instructions.
  2. Chop the chicken into bite-sized pieces, season with salt and pepper, and sauté in oil over medium heat until golden and cooked through (5-7 minutes).
  3. Slice the bell peppers, cucumbers, and carrots while the chicken cooks.
  4. In a small bowl, mix equal parts mayonnaise and sweet chili sauce, adding sriracha to taste.
  5. Assemble the bowl starting with the rice or quinoa, then add the chicken and colorful veggies. Drizzle with Bang Bang sauce and top with green onions.

Notes

For a vegetarian option, swap chicken for tofu or chickpeas. Adjust sauce thickness for preference.
