- 1 cup rice or quinoa
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cucumber, sliced
- 1 cup carrots, julienned
- 2 green onions, chopped
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 1-2 tbsp sriracha (to taste)
- Salt and pepper to taste
- Oil for cooking
Instructions
- Cook the rice or quinoa according to package instructions.
- Chop the chicken into bite-sized pieces, season with salt and pepper, and sauté in oil over medium heat until golden and cooked through (5-7 minutes).
- Slice the bell peppers, cucumbers, and carrots while the chicken cooks.
- In a small bowl, mix equal parts mayonnaise and sweet chili sauce, adding sriracha to taste.
- Assemble the bowl starting with the rice or quinoa, then add the chicken and colorful veggies. Drizzle with Bang Bang sauce and top with green onions.
Notes
For a vegetarian option, swap chicken for tofu or chickpeas. Adjust sauce thickness for preference.
