Description

Delicious Baked Chicken Quesadillas filled with shredded chicken, cheese, and spices, baked to crispy perfection.


Ingredients

  • 2 cups cooked and shredded boneless skinless chicken breast
  • 4 medium flour tortillas
  • 1 cup shredded cheese (mix of cheddar and Monterey Jack)
  • 1 bell pepper, chopped
  • 1 cup chopped onions
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Sour cream or salsa (for dipping, optional)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine shredded chicken, bell pepper, onion, cheese, and spices. Mix until well coated.
  3. Lay a tortilla flat on a clean surface. Spoon a generous amount of the filling onto half of the tortilla, then fold it over to create a half-moon shape.
  4. Place the assembled quesadilla on a baking sheet lined with parchment paper. Bake for about 10-12 minutes, or until golden brown and crispy.
  5. Slice and serve with sour cream, salsa, or guacamole for dipping.

Notes

You can assemble the quesadillas ahead of time and refrigerate them before baking. They can also be frozen before baking.
