- 6-8 medium-sized fresh apricots, pitted and sliced
- ¾ cup granulated sugar
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1 cup whole milk
- ½ cup unsalted butter, melted
- ½ tsp cinnamon
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the sliced apricots with half of the sugar and let them sit for about 10 minutes.
- In another bowl, whisk together the flour, remaining sugar, baking powder, and cinnamon.
- In a separate bowl, combine the melted butter and milk.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Pour the apricots into a greased baking dish, then spoon the batter over the top.
- Bake for 35-40 minutes or until the top is golden brown and a toothpick comes out clean.
- Let it cool for a few minutes before serving.
