Description

A warm and comforting dessert featuring a sweet layer of ripe apricots topped with a buttery, flaky crust.


Ingredients

  • 6-8 medium-sized fresh apricots, pitted and sliced
  • ¾ cup granulated sugar
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 cup whole milk
  • ½ cup unsalted butter, melted
  • ½ tsp cinnamon
  • 1 tsp vanilla extract


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the sliced apricots with half of the sugar and let them sit for about 10 minutes.
  3. In another bowl, whisk together the flour, remaining sugar, baking powder, and cinnamon.
  4. In a separate bowl, combine the melted butter and milk.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined.
  6. Pour the apricots into a greased baking dish, then spoon the batter over the top.
  7. Bake for 35-40 minutes or until the top is golden brown and a toothpick comes out clean.
  8. Let it cool for a few minutes before serving.
