Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, combine flour, baking powder, cinnamon, and brown sugar.
- In another bowl, mix Greek yogurt, eggs, and vanilla extract until smooth.
- Gradually add the dry ingredients to the wet mixture until just combined.
- Gently fold in the chopped apples.
- Line a muffin tin with liners or grease it, and fill each cup about three-quarters full.
- Bake for about 18-20 minutes, or until a toothpick comes out clean.
- Let cool slightly before serving.
Notes
Don’t overmix the batter for fluffy muffins. Store uneaten muffins in an airtight container for up to three days or freeze for later.
