Description

Delicious and fluffy muffins made with tart apples and warm cinnamon, combined with creamy Greek yogurt, perfect for breakfast or a snack.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup Greek yogurt
  • 2 large eggs
  • 3/4 cup brown sugar
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1 cup chopped apples (e.g., Granny Smith)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine flour, baking powder, cinnamon, and brown sugar.
  3. In another bowl, mix Greek yogurt, eggs, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet mixture until just combined.
  5. Gently fold in the chopped apples.
  6. Line a muffin tin with liners or grease it, and fill each cup about three-quarters full.
  7. Bake for about 18-20 minutes, or until a toothpick comes out clean.
  8. Let cool slightly before serving.

Notes

Don’t overmix the batter for fluffy muffins. Store uneaten muffins in an airtight container for up to three days or freeze for later.
