- 4 Boneless Chicken Breasts
- 200g Brie Cheese
- 2 Apples (Fuji or Honeycrisp)
- 2 tsp Fresh Thyme or Rosemary
- Salt and Pepper to taste
- 2 tbsp Olive Oil
- Optional: Walnuts or pecans
Instructions
- Preheat your oven to 375°F (190°C).
- Make a pocket in each chicken breast by slicing them from the side.
- In a bowl, mix diced apples, brie cheese, and chopped thyme or rosemary. Season with salt and pepper.
- Stuff the chicken with the apple and brie mixture. Use toothpicks to secure if necessary.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear each chicken breast for 3-4 minutes per side until golden brown.
- Transfer the skillet to the oven and bake for 20-25 minutes until chicken is cooked through (165°F or 75°C internally).
- Let the chicken rest for 5 minutes before serving.
Notes
Don’t overstuff the chicken to ensure even cooking. Let chicken sit at room temperature for 15 minutes before cooking.
