- ¾ cup brown sugar (or coconut sugar)
- ¼ cup maple syrup (or agave syrup)
- ½ cup coconut oil (or vegan butter)
- 1 cup chopped pecans (or walnuts)
- 2 tablespoons vegan milk (almond, soy, or oat)
- 1 teaspoon vanilla extract (or almond extract)
- 1 teaspoon baking powder
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together the flour, brown sugar, baking powder, and a pinch of salt.
- In another bowl, mix the melted coconut oil, maple syrup, vegan milk, and vanilla.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined.
- Add the chopped pecans to the dough, stirring gently to incorporate.
- Using a cookie scoop or spoon, drop dough onto the baking sheet, spacing them a couple of inches apart.
- Bake for 10-12 minutes, or until the edges are golden brown.
- Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Serve warm with dairy-free ice cream or a drizzle of chocolate sauce. Add a sprinkle of sea salt for a sweet and salty mix.
