Description

A warm and cozy Vegan Bread Pudding made with stale bread, plant-based milk, and natural sweeteners, perfect for dessert or breakfast.


Ingredients

  • 6 cups day-old bread (baguette, challah, or sourdough)
  • 1 cup plant-based milk (almond, oat, or coconut)
  • 1 cup maple syrup
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 2 tablespoons flaxseed meal mixed with 6 tablespoons water
  • Optional add-ins: raisins, chocolate chips, or nuts


Instructions

  1. Preheat your oven to 350°F (175°C). Cut or tear your day-old bread into bite-sized pieces and place them in a greased baking dish.
  2. In a bowl, combine the plant-based milk, maple syrup, ground cinnamon, vanilla extract, and flaxseed meal mixture. Mix until well combined.
  3. Pour the wet mixture over the bread pieces. Gently toss everything together to ensure every piece is soaked. Let it sit for about 15 minutes.
  4. Bake for 35 to 40 minutes until it’s golden brown on top and has a custardy texture.
  5. Allow it to cool slightly before serving. Enjoy warm with optional toppings like whipped coconut cream or a drizzle of maple syrup.

Notes

Use stale bread for the best texture. Feel free to add spices like cardamom or ginger, and check while baking for doneness.
