- 6 cups day-old bread (baguette, challah, or sourdough)
- 1 cup plant-based milk (almond, oat, or coconut)
- 1 cup maple syrup
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 2 tablespoons flaxseed meal mixed with 6 tablespoons water
- Optional add-ins: raisins, chocolate chips, or nuts
Instructions
- Preheat your oven to 350°F (175°C). Cut or tear your day-old bread into bite-sized pieces and place them in a greased baking dish.
- In a bowl, combine the plant-based milk, maple syrup, ground cinnamon, vanilla extract, and flaxseed meal mixture. Mix until well combined.
- Pour the wet mixture over the bread pieces. Gently toss everything together to ensure every piece is soaked. Let it sit for about 15 minutes.
- Bake for 35 to 40 minutes until it’s golden brown on top and has a custardy texture.
- Allow it to cool slightly before serving. Enjoy warm with optional toppings like whipped coconut cream or a drizzle of maple syrup.
Notes
Use stale bread for the best texture. Feel free to add spices like cardamom or ginger, and check while baking for doneness.
