Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the unsalted butter and granulated sugar until light and fluffy.
- Stir in the vanilla extract and mix until combined.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this mixture to the butter mixture, mixing until just combined.
- Gently fold in the fresh raspberries into the dough.
- Dollop the dough onto a baking sheet lined with parchment paper and bake for 12-15 minutes or until the edges are golden brown.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
For thicker cookies, chill the dough for 30 minutes before baking. Add lemon zest for extra brightness.
