Ingredients

  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup fresh raspberries


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the unsalted butter and granulated sugar until light and fluffy.
  3. Stir in the vanilla extract and mix until combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this mixture to the butter mixture, mixing until just combined.
  5. Gently fold in the fresh raspberries into the dough.
  6. Dollop the dough onto a baking sheet lined with parchment paper and bake for 12-15 minutes or until the edges are golden brown.
  7. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

For thicker cookies, chill the dough for 30 minutes before baking. Add lemon zest for extra brightness.
