Instructions
- Preheat the oven to 425°F (220°C). In a saucepan, combine water, butter, and salt. Bring to a boil and then remove from heat and add the flour all at once, stirring until a ball forms.
- Let the dough cool slightly. Add the eggs one by one, incorporating each fully before adding the next until smooth and glossy.
- Using a piping bag or spoon, drop mounds of dough onto a parchment-lined baking sheet, leaving room for expansion.
- Bake for 20-25 minutes until golden brown and light; avoid opening the oven door during baking.
- Whip together heavy cream, sugar, and vanilla extract until soft peaks form for the cream filling.
- Once the puffs are cooled completely, cut a slit on the side and fill with the vanilla cream using a piping bag or spoon.
