Description
A cozy and wholesome Tuscan Chicken Pasta dish that combines tender chicken, pasta, and a creamy sun-dried tomato sauce.

- 1 lb Boneless skinless chicken breast
- 8 oz Fettuccine or penne pasta
- 2 tbsp Olive oil
- 3 cloves Garlic, minced
- 1/2 cup Sun-dried tomatoes, chopped
- 2 cups Fresh spinach
- 1 cup Heavy cream
- 1/2 cup Parmesan cheese, grated
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil and cook the pasta according to package directions. Reserve about a cup of pasta water before draining.
- Sauté the Chicken: Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper, then cook for 6-7 minutes on each side until golden and cooked through. Remove and let it rest before slicing.
- Add Garlic and Tomatoes: In the same skillet, add more oil if needed and toss in the minced garlic. Cook until fragrant, about a minute. Stir in the sun-dried tomatoes.
- Create the Creamy Sauce: Pour in the heavy cream and bring it to a gentle simmer. Allow it to thicken slightly before adding grated Parmesan and Italian seasoning. Stir until the cheese melts.
- Combine Everything: Add the cooked pasta, sliced chicken, and spinach. Toss until everything is coated in the sauce. Add reserved pasta water to loosen the sauce if needed.
- Serve: Taste and adjust seasoning with salt and pepper. Serve hot, garnished with more Parmesan cheese and cracked pepper.
Notes
Don’t overcook the pasta and feel free to experiment with veggies.
