Description

A cozy and wholesome Tuscan Chicken Pasta dish that combines tender chicken, pasta, and a creamy sun-dried tomato sauce.


Ingredients

  • 1 lb Boneless skinless chicken breast
  • 8 oz Fettuccine or penne pasta
  • 2 tbsp Olive oil
  • 3 cloves Garlic, minced
  • 1/2 cup Sun-dried tomatoes, chopped
  • 2 cups Fresh spinach
  • 1 cup Heavy cream
  • 1/2 cup Parmesan cheese, grated
  • 1 tsp Italian seasoning
  • Salt and pepper to taste


Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil and cook the pasta according to package directions. Reserve about a cup of pasta water before draining.
  2. Sauté the Chicken: Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper, then cook for 6-7 minutes on each side until golden and cooked through. Remove and let it rest before slicing.
  3. Add Garlic and Tomatoes: In the same skillet, add more oil if needed and toss in the minced garlic. Cook until fragrant, about a minute. Stir in the sun-dried tomatoes.
  4. Create the Creamy Sauce: Pour in the heavy cream and bring it to a gentle simmer. Allow it to thicken slightly before adding grated Parmesan and Italian seasoning. Stir until the cheese melts.
  5. Combine Everything: Add the cooked pasta, sliced chicken, and spinach. Toss until everything is coated in the sauce. Add reserved pasta water to loosen the sauce if needed.
  6. Serve: Taste and adjust seasoning with salt and pepper. Serve hot, garnished with more Parmesan cheese and cracked pepper.

Notes

Don’t overcook the pasta and feel free to experiment with veggies.
